One of the most tender cuts of venison, Pure South venison boneless short loins are ready to be pan-fried like a steak.

Simply toss the short loins in finely chopped garlic, salt, pepper and olive oil. Panfry over moderate to high heat for about 5 minutes on each side for medium. Remove from the pan and transfer to a plate. Loosely cover with foil and rest for about 7 minutes.

Slice on the diagonal to serve.

Delicious with Dijon mustard, capers and chopped parsley.
