Succulent pork mince dishes are something every good cook has in their repertoire.

For a quick meal heat 3 tablespoons vegetable oil in a wok or frying pan over high heat and add 500g pork mince, 2 chopped cloves of garlic, 6 cloves of sliced water chestnut, 2 tablespoons chopped ginger and 1/2 a diced red capsicum.

Stirfry, breaking up the mince, for a few minutes until the pork is cooked then add a finely chopped spring onion, a handful of chopped coriander and 2-3 tablespoons of Chinese oyster sauce.

Mix well until bubbling and serve spooned into small lettuce leaves.
