Everyone loves classic thin, crisp crumbed beef schnitzel.

Simply dust each piece in seasoned flour, dip in a mix of 2 parts milk to 1 part beaten egg, cover in breadcrumbs and pat well to make the crumbs adhere to the schnitzel. Panfry in olive oil over moderate heat until well browned.

Serve with plenty of lemon for squeezing.
